Joyce Dahl suggested a wonderful service project for our Relief Society. She works at a school where bibs are needed for students who have disabilities.
We met at Marci Shaw's home and with 4 sewing machines, made over 55 towels into bibs. Some of the sisters cut bias tape and pinned, while the others sewed and clipped threads.

It felt like the olden days when we would get together and make projects, quilt together and socialize.
We finished making all the bibs. It was a fun night, doing something worthwhile for children who go through several bibs a day.

Coconut Bundt Cake:
2 1/2 c. flour
1/2 tsp. salt
2 tsp. baking powder
2 sticks unsalted butter
2 1/2 c. sugar
6 large eggs
1 tsp. vanilla
2 tsp. coconut extract
1 c. canned unsweetened coconut milk

In sm. bowl add flour, salt and b.powder
In a separate bowl cream butter and sugar. Add eggs one at a time. Add liquid ingredients. Add dry ingred. last and stir in.
Grease bundt pan with shortening and flour
Add batter 3/4/ full
Add batter 3/4/ full
Oven at 350. Bake for 45 min. or until toothpick comes out clean. Cool 10 min. then shake pan to loosen cake from sides of pan and invert onto a plate. Cool completely before adding glaze.
glaze:
2 c. powdered sugar
4 tbsp. pineapple juice
1/2 c. flaked coconut
Mix sugar and juice then pour on top of cake. Sprinkle with flaked coconut.
Absolutely delicious!!!!!!
