recipe for salad at Stake Ed. day

Spinach Salad

1 large package spinach*
1/3 thinly sliced red onion
1/2 cup sliced mushrooms
3/4 cup grated Swiss or Mozzarella cheese
1/2 cup cooked and crumbled bacon

We mixed spinach with Romaine lettuce at the Education Day lunch to make it more economical but the original recipe is spinach only.
All of the above ingredients are approximate and you can use more or less to your taste.

Dressing:
1 cup vegetable oil
1/3 cup red wine vinegar
3/4 T poppy seeds
1/3 tsp dry mustard
3/4 tsp salt
1/2 sugar

Shake the dressing together to dissolve the sugar. Add the dressing just before serving. This recipe of dressing would make enough for two of the salad recipes. It stores well in the fridge.
